How Do I Freeze The Meatballs In Tomato Sauce

Full question

I'm a new grandma and trying to plan making meals ahead for my toddler granddaughter's visits. In How to Eat, Nigella refers to freezing the meatballs in little bags of 4 a piece, but what I'm not clear on is this done before or after cooking? Many thanks.

Nigella's Meatballs In Tomato Sauce (from HOW TO EAT) are walnut-sized meatballs made with beef mince (ground beef). The meatballs are briefly browned in a hot frying pan and then simmered in a tomato sauce until cooked through. Nigella suggests freezing individual portions, each with 4 meatballs per portion and you can do this in sturdy freezer bags or airtight containers. The meatballs are frozen after cooking, along with some of the sauce.

This makes it easy to thaw and serve only as many portions as you need. Thaw the meatballs overnight in the fridge and if they are frozen in bags then we suggest you transfer them to a bowl or dish before you put them in the fridge. Reheat the meatballs in a saucepan over a medium-low heat until piping hot all the way through. Try not to stir the meatballs too much as you reheat them as this could cause them to break up. Just give the saucepan a gentle shake from time to time and add a splash of water if the sauce is becoming too thick.
