The Quick Gherkins sound and look amazing. Do you keep them in the pickling liquid if storing?

Nigella's Quick Gherkins (from SIMPLY NIGELLA) are cucumbers that have been quick pickled in a mixture of white balsamic and rice vinegars. They are a quick home-made version of dill pickles that retain their crunch and require no difficult cooking. Nigella uses Lebanese cucumbers as they have a better flavour plus more flesh and less seeds than regular English cucumbers.
The Quick Gherkins will keep in the fridge for up to a week and they should remain in the pickling liquid while they are stored. The Quick Gherkins should retain their crunch and colour during this time but will start to soften if they are stored for much longer. They are good with anything that needs an addition of crunch and acidity, or just on their own as a snack.
