Full question
I froze last year's Ultimate Christmas Pudding (per the recipe instructions) as we ended up having a change of plans. I read to take it out of the freezer 24 hours before 2nd streaming, but should it be unwrapped from all the freezer wrappings or thawed with the wrappings and then rewrapped appropriately for the 2nd steaming? Thank you!
Our answer
Nigella's Ultimate Christmas Pudding (from NIGELLA CHRISTMAS) can be frozen after the initial steaming for up to one year. The pudding should be left to thatw at room temperature for 24 hours before the second steaming.
If you have steamed the pudding in a plastic basin with a clip-on lid then it may be easiest to unwrap the foil from the pudding (leaving the lid in place) and then let the pudding thaw with just the lid clamped on, before wrapping again the next day before steaming. If you have used a basin without a lid and instead used greaseproof paper on top of the pudding and then wrapped it in food wrap and foil for steaming then we usually suggest to replace all of these before you store or freeze the pudding. In this case it would not be necessary to unwrap the pudding and rewrap it again. You can just take the pudding out of the freezer, let it thaw and steam it.
