Full question
How long do you heat the mixture of condensed milk and dark chocolate when making the Chocolate Pistachio Fudge?
Our answer
Nigella's Chocolate Pistachio Fudge (from NIGELLA EXPRESS) is easy to make as it doesn't need to be boiled in the way that you would normally make fudge. It is a combination of sweetened condensed milk and dark (bittersweet) chocolate.
When making the fudge the chocolate and condensed milk are warmed together in a saucepan. Chocolate is very heat sensitive and you don't want to over heat the chocolate as otherwise it can seize and turn grainy. We suggest using a very low heat and heat just long enough so that the chocolate has almost fully melted, but just has a few small unmelted pieces left. You can stir from time to time as it heats. Try not to boil the mixture and once there are just a few small pieces of unmelted chocolate left, take the saucepan off the heat and let it stand for a minute or two, so that the rest of the chocolate can melt in the residual heat. Give the mixture another stir to make sure that everything is smooth and completely mixed.
