Nigella's Buttermilk Birthday Cake (from HOW TO BE A DOMESTIC GODDESS is a popular cake as it is moist but has a fine crumb and a slightly firmer texture, which can make it good for some shaped cakes. The cake recipe makes enough for a two layer 20cm (8-inch) round cake or a deep 23cm (9-inch) round cake and for many shaped pans this is enough batter, but you should always check the instructions for the specific pan.

This quantity of cake mixture is also enough to make a deep 20cm (8-inch) sqare cake or a slightly skinnier 28 x 18 cm (11 x 7 inches) rectangular cake.
