How Much Curry Paste Should I Use For The Cauliflower Curry?

Full question

I used only 3 tablespoons of red curry paste (Mae Ploy) in the Cauliflower And Cashew Nut Curry and it was a bit too spicy for a vegetable curry. Can I vary the quantity or type of curry paste?

Nigella's Cauliflower And Cashew Nut Curry (from SIMPLY NIGELLA) is a vegan dish that is a combination of Indian and Thai influences. Nigella suggests using 4 tablespoons of red Thai curry paste in the sauce.

All curry pastes tend to vary in spiciness and also some pastes will also start to mellow from the time the jar or package is opened. So Nigella's 4 tablespoons is just a suggestion and you can add as little or as much curry paste as you like. If you are not sure then add less curry paste at the beginning of step 3, add the coconut milk and taste the sauce to see if it needs any more. If you want more spice then whisk in more curry paste a teaspoon at a time until it reaches the right level of heat for you. Bear in mind that when you eat the sauce with the cauliflower, it may taste a little less hot.
