I would like to make the Coca Cola Cake for a party but need to make it a day in advance. Is that OK with the icing and if so, how best to keep it overnight? Thank you!

Nigella's Coca Cola Cake (from HOW TO BE A DOMESTIC GODDESS) is a chocolate sponge cake that is covered with a chocolate glace-style icing. The Coca Cola in the cake helps to emphasise the flavour of the chocolate, rather than being a dominating flavour in the cake. It is possible to make the cake and ice it a day in advance.

Once the cake is iced and fully cooled it is best to cover it with a cake dome or a cake tin (or a large bowl that can cover the cake without touching it). Leave it in a cool, dry place overnight. It is probably best not to refrigerate the cake as some condensation can form on the icing and make it a little soft and sticky.
