Being a singleton, I have to proportion Nigella's ingredients accordingly but still have leftovers. How do I store the Saffron Scented Chicken Pilaf to avoid waste?

Nigella's Saffron Scented Chicken Pilaf (from NIGELLA SUMMER) is a mixture of fragrant rice and marinated chicken. The recipe serves 6 but it would be possible to cook just one quarter of the ingredients to make two smaller portions or one more generous portion plus a smaller amount of leftovers.
As the pilaf contains chicken and rice, the leftovers need to be refrigerated as quickly as possible and within 2 hours of making. Store in the fridge in an airtight container for up to 3 days. We would suggest eating the leftovers as a salad, tossed with a little olive oil and lemon juice, plus some rocket (arugula) or baby spinach leaves.
