How Should I Store The Easy Almond Cake?

Asked by cdz___. Answered on 11th July 2024

Full question

The Easy Almond Cake turned out perfectly! Thank you! How would I best store it if I’m not serving it for 3 days? Cling wrap, air tight container, refrigerator? Is it ok to also leave it on the bottom base of the cake pan?

Our answer

Nigella's Easy Almond Cake (from HOW TO BE A DOMESTIC GODDESS) is a moist cake that is made with marzipan. It gives a moist cake with a good almond flavour that has a finer texture than a cake made with ground almonds and can be made easily in a food processor.

The cake is moist, so should keep fairly well. If you have made the cake in a springform pan then it is fine to leave the cake on the base of the pan while you store it, though you may want to remove it from the base for serving. We would suggest storing the fully cooled cake in an airtight container in a cool place. The cake should remain fresh for this time if it is not cut, but add the icing (confectioners') sugar just before serving. If it is warm or humid in your kitchen then leave the cake in a cool place, though try to avoid the fridge as chilling cakes can make them stale more quickly. If the fridge is your only option in extremely warm weather then make sure you remove the cake from the fridge 2-3 hours before serving, so that it can come to room temperature.
