Icing Lemon Tendercake

Full question

Why does the Lemon Tendercake have to be dressed/iced right before it’s served? I want to make it and take it to work which would mean I wouldn't really be able to ice it at work and would like to ice it before heading to work? Will it make the cake crumb soggy?

Nigella's Lemon Tendercake With Blueberry Compote (from AT MY TABLE) is a moist vegan cake that is topped with an icing made from coconut milk yogurt and served with a bluebery compote. We prefer to add the icing and compote just before serving, as both of these items need to be kept refrigerated until they are used and should not be kept out of the fridge for more than two hours.

In addition, the coconut milk icing will be absorbed by the cake over time. You could probably ice the cake an hour ahead but make sure it is kept somewhere cool. Alternatively you could mix up the yogurt and sugar and put it in a resealable container and put the compote in a separate container. Carry them to work with the cake and put both of them in a fridge, or somewhere cool, and just pour the yogurt over before the cake is put out, offering the compote on the side if people are helping themselves.
