Would the Indian Shepherd's Pie also work with chicken mince/ground chicken and could it be made vegetarian?

Our answer

Nigella's Indian-Spiced Shepherd's Pie (from SIMPLY NIGELLA) blends familiar comfort food with the less traditional, by having a spiced filling topped with ginger-spiked sweet potato mash. You could replace the minced (ground) lamb in the filling with chicken but we would suggest using minced chicken thigh rather than breast (or a mix of the two) as it has more flavour and moisture. You could also use minced turkey as another alternative.

If you wanted to make a vegetarian version then we would suggest using the sauce from Nigella's Vegan Spag Bol as a filling, but omit the dried chilli flakes, dried thyme and paprika and instead add the spices from the Shepherd's Pie filling (add them at step 5, when you would add the chilli flakes, thyme and paprika). This may make very slightly more than you need, depending on the size of your dishes, but any extra filling can be refrigerated for up to 5 days and then served with rice or couscous.
