Hi! Why is butter added to the melted chocolate in the Easter Nests?
Our answer
Nigella's Easter Nests (from HOW TO BE A DOMESTIC GODDESS) are chocolate treats made from a combination of crumbled shredded wheat cereal, chocolate and melted butter. The cereal mimics the twigs in a bird's nest and they are fun for children (and adults) to make. They are also an easy option to make for an Easter teatime.
Milk and dark (bittersweet) chocolates are melted together with butter, before the cereal is added. Chocolate will tend to harden as it cools and sets, but adding a little butter means that the chocolate sets with a slightly softer texture. If you omitted the butter the nests would be harder and slightly more difficult to eat, plus you may not have quite enough chocolate mixture to coat the cereal comfortably.
