Is It Possible To Make The Scented Citrus Cake Without Nuts?

I am unable to eat nuts due to a histamine intolerance. Is there any way of making the Scented Citrus Cake nut free?

Our answer

Nigella's Scented Citrus Cake (from AT MY TABLE) is a gluten-free cake that uses a combination of rice flour and ground almonds (almond meal). The rice flour also gives the cake a deliciously tender texture and the almonds help to make the cake moist and also help with the cake's texture.

Unfortunately, we don't think it is possible to replace the almonds in the cake with a no-nut alternative as the oil in the nuts add the extra moisture. If you were to replace the nuts with rice flour or regular flour then you would need to start changing the quantity of butter and eggs to offset the loss of fat. It is not clear if the cake has to be gluten free, but if this is not a requirement we would suggest trying My Mother-In-Law's Madeira Cake, increasing the lemon to zest of 2 lemons and juice of 1 1/2 lemons and pouring the glace icing from the Scented Citrus Cake on to the cooled lemon madeira cake.
