Is The Amount Of Flour In The Chocolate Tahini Banana Bread Correct?

I’m puzzled by the small amount of flour in the Chocolate Tahini Banana Bread. Would you please confirm that ½ cup is the correct measurement. Also, would it be the same measurement if I use all-purpose or whole wheat flour?

Our answer

Nigella's Chocolate Tahini Banana Bread is a dark and moist banana bread, with the smoky flavour of the tahini enhancing the chocolate flavour.

The amount of rice flour (60g/½ cup) is correct. Although it seems low, there is also quite a lot of cocoa powder included in the recipe and cocoa powder absorbs a lot of liquid, which means that less flour is needed. The rice flour can be replaced with plain or all-purpose flour. We have not tried the banana bread with wholemeal or whole wheat flour ourselves, but suspect that it may be possible to use it instead of the rice flour. However, we would note that whole wheat flour in the US has quite a high gluten content, so the banana bread will have a tougher texture and we are unable to guarantee the results if whole wheat flour is used.
