Is the skin for Ham In Coca Cola supposed to end up crispy? I can’t get it even close to crispy. What am I doing wrong?

Nigella's Ham In Coca Cola (from NIGELLA BITES) simmers a gammon (a cured but uncooked ham) is coca-cola and then finishes the ham with a sticky glaze that is caramelized in a hot oven.
Although the ham is simmered with the skin on, the skin should be removed before the ham is glazed and put into the oven (see step 4 of the recipe). As the ham has been simmered, it would be quite difficult to make the skin go crispy and usually it is discarded. Also the glaze will tend to slide too easily off the smooth skin. You should use a sharp, thin-bladed knife to remove the skin, leaving a thin layer of fat on the cooked ham. Score the layer iof fat with the knife to make diamond shapes (being careful not to cut into the meat) and then add the glaze and bake as directed.
