Is The Weight Of Chillies In Chilli Jam The Unprepared Weight?

For the Chilli jam, is the weight given in the recipe for chillis and peppers prior to deseeding etc or after they have their stalks and seeds removed? Thanks!

Our answer

Nigella's Chilli Jam (from CHRISTMAS) is perfect as a Christmas present, to go alongside cold meats and cheeses or to perk up a sandwich. The jam is made with a combination of chillies (for heat), red peppers (for colour), vinegar and jam sugar. Jam sugar has added pectin, which helps the Chilli Jam to set.

The weight of chillies and red (bell) peppers given in the recipe is the unprepared weight. There will be a difference in weight between the unprepared and prepared vegetables and each time will be slightly different, but a slight varation won't affect the Chilli Jam significantly. Generally in Nigella's recipes, if the preparation is given after the weight and description of the ingredient, then the weight is the unprepared weight.
