The recipe for Nutella Pancakes requires alcohol. Can you recommend a nonalcoholic alternative instead?
Our answer
NIgella's recipe for Nutella Pancakes (from NIGELLA EXPRESS) has crêpes filled with Nutella chocolate hazelnut spread and baked in the oven. Before baking the pancakes are drizzled with a combination of butter and Frangelico (a hazelnut liqueur).
This mixture helps to make the edges of the pancakes deliciously crisp and prevents the filled part of the pancake from drying out. If you don't have Frangelico then Nigella suggests rum as an alternative. If you want to avoid alcohol then we would suggest replacing the 80ml (5 tablespoons) of Frangelico with 3 tablespoons of whole milk and 2 tablespoons of hazelnut syrup (the type used to make flavoured coffees). If you don't have the syrup then just replace the 80ml Frangelico with 80ml whole milk. We suggest just whipping the cream without any non-alcoholic alternative to Frangelico, as if you substitute it with hazelnut syrup then we suspect that the cream will be a little too sweet.
