Full question
I live in Morocco but cannot find Halloumi cheese anywhere, I have checked all the stores and asked but I cannot find it - can you suggest an alternative for the Halloumi with Chilli?
Our answer
Nigella's Halloumi With Chilli (from NIGELLA BITES) douses pieces of golden-crusted halloumi with a chilli-spiked oil. Halloumi is a semi-hard cheese that originated in Cyprus and the Mediterranean region and has become popular across the world. Halloumi tends to be eaten grilled, griddled or fried. It has a fairly unique texture that means that it holds its shape when cooked and this texture means it is often referred to as "squeaky cheese".
We can't suggest a direct replacemant for halloumi, but you may be able to find a local cheese with similar qualities. The chilli oil would also be delicious with fresh mozzarella or burrata (not cooked) as the spicy oil goes well with the mild, milky flavour of the cheese.
