Korean Calamari With Chicken

Full question

Would it be possible to use chicken or another protein in the Korean Calamari recipe? I'm not a fan of calamari but the recipe sounds too good to miss out on!

Our answer

Nigella's Korean Calamari (from KITCHEN) is a stir fried dish of squid, baby corn and spring onions (scallions) in a salty, sweet and spicy sauce. The spiciness comes from the Korean hot red pepper paste called gochujang.

It is possible to use chicken, pork or beef as an alternative to the squid, though the dish will not be exactly the same as squid has a slightly sweet flavour that compliments the sauce. If using an alternative we suggest that the meat is cut into small strips, about the size of a little finger, before it is marinated in the rice wine. Also chicken and pork both need to be cooked through completely, so you may need to slightly increase the cooking time at step 6 and check that the chicken or pork is cooked through before serving.
