Lamb Tagine Cooking Times

Asked by soupersuzy. Answered on 1st August 2021

Full question

I have Nigella Express and many of the recipes are for 6 or more people. Can I just halve the ingredients? One in particular is the Lamb, Olive and Caramelized Onion Tagine - if I did halve the ingredients would I need to adjust the cooking time? Many thanks for your help.

Our answer

Nigella's Lamb, Olive And Caramelized Onion Tagine (from NIGELLA EXPRESS) requires very little hands-on cooking time as it uses caramelized onions (sometimes known as onion marmalade) from a jar as a time-saving step. The ingredients can be halved to make fewer portions, or dishes like this freeze very well so you could make a full amount and portion the leftovers into airtight boxes, freeze for up to 3 months, then thaw overnight in the fridge and reheat in a saucepan until piping hot. The cooking time for the tagine is the same, even for a smaller amount of ingredients, as it is the time needed for the lamb to become tender and this doesn't really change much with a smaller quantity of lamb.

For other recipes in NIGELLA EXPRESS most can be halved but unfortunately need to be looked at on a recipe-by-recipe basis. As a rule of thumb, those that don't need to be baked in a specific-sized tin or pan are easier to halve. If you find you need half an egg for the recipe then use a whole egg yolk instead, as it is difficult to halve one egg and the leftover egg white can be frozen and used later.
