If I want to double the quantity of the Chocolate Meringue Truffle Cake do I just double each the quantities for each of the ingredients?
Our answer
Nigella's Chocolate Meringue Truffle Cake (from Feast and on the Nigella website) has a meringue base and a chocolate and cream filling. It is a popular choice for Easter. We are not sure if you want to make a larger version of the cake or just two cakes. If making a larger version of the cake then it can be a little difficult to scale up the meringue and filling correctly for the size of pan, but you would need to spread a thin layer of meringue over the base of the springform pan and then bake until the top of the meringue is dry to the touch.
For the truffle filling it is fairly easy to make a larger quantity as the cake filling doesn't need baking. But make sure that you give it enough time to chill thoroughly. If you are making two 20cm/8-inch cakes then you can just double the quantities of all of the ingredients and try to split the mixtures as evenly as possible between the two pans.
