Full question

I’d like to use ricotta cheese instead of cottage cheese. Would I do this in equal amounts?

Our answer

Nigella's Lokshen Pudding is a baked sweet noodle dish that is based on a traditional family recipe, given to Nigella by a friend. Usually Lokshen Pudding is made with cottage cheese, though some versions have now evolved to use other dairy products.

Our preference is to use cottage cheese, though we suspect that you could use ricotta cheese instead. We would suggest using a whole milk ricotta cheese and not a non-fat version. And we also think that you would use the same amount of ricotta cheese as cottage cheese, that is 1kg or 4 cups. However we would mention that as we have not tried the pudding with ricotta cheese we are unable to guarantee the results.
