Nigella's Mozzarella In Carrozza (from NIGELLA BITES) is a sandwich that is filled with melting, gooey mozzarella. "In Carrozza" translates as "in a carriage" so the Mozzarella is inside a carriage of fried bread.

The sandwich is dipped in milk, coated in flour and dipped in egg, which creates a crisp coating when it is shallow fried. The bread does need to be dipped in milk first so that the flour will stick and this in turn gives the egg a base to hold onto. The bread should not become soggy if it is only briefly dipped in the milk. Also Nigella mentions in the method using a regular white sliced loaf ("plastic bread") for the sandwich and this type of bread doesn't usually suck up too much milk when it is dipped. But remember that staler bread will absorb liquid more easily and give the sandwich just the briefest dunking in the milk to stop it from becoming soggy.
