Stupid question, but for the Slow Roast Pork Belly are you meant to transfer the marinade to the roasting tin too?
Our answer
Nigella's Slow Roasted Pork Belly (from KITCHEN) has a marinade made with tahini, soy sauce and lemon and lime juices. This is smeared onto the bottom and sides of the meat and the belly is left to marinate for several hours. It is important that the marinade doesn't cover the skin as this will prevent the skin from crisping into crunchy crackling during cooking.
As the pork stands some of the marinade will collect in the bottom of the dish. This should be discarded as if it sits in the bottom of the roasting pan it will just dry out. Pork belly contains plenty of fat which renders out during the long, slow cooking, leaving the meat moist and tender, and doesn't need additional liquid in the bottom of the roasting tin.
