A question from Belgium! Do you eat the Marmalade Pudding Cake warm, immediately after baking?! Or can it be served cold?
Our answer
Nigella's Marmalade Pudding Cake (from KITCHEN) is an orange-flavoured sponge cake that has a marmalade glaze poured over it while still warm. It is at its very best when served warm from the oven, as a cozy dessert, with cream or custard (creme anglaise). The sponge will keep warm for 45 minutes to an hour after it is baked, so you could bake it before sitting down to a main course and leave in a warm place until ready to serve.
Leftovers of the cake should be covered and kept in the fridge for up to 2 days. It is good cold and excellent if used in a free-form plate trifle, topped with blackberries and whipped cream. Leftovers can be reheated but can dry out a little if reheated in the oven so it is easier to reheat individual portions in a microwave, following the instructions in the microwave's handbook.
