Matzo Coating for Fishcakes

Nigella's Salmon Fishcakes (from Nigella Bites and on the Nigella website) are fuss-free as they are made with lefover mashed potatoes and canned salmon. Nigella uses matzo meal as an alterntive to breadcrumbs, partly as she usually has them in her store cupboard.

You can use gluten free breadcrumbs as an alternative. You can use dried or fresh breadcrumbs, though dry ones would be preferable. Some people also use cornflake crumbs as a coating. Make sure that the cornflakes are a gluten free brand (not all are) and grind them to crumbs in a good processor or put in a bag and crush with a rolling pin.
