Melting Guinness Cake Ingredients

Full question

I was making the Chocolate Guinness Cake and forgot to take the saucepan off the stove when the butter melted, so it started to boil. I made the cake and baked it, but is this OK to eat?

Our answer

Nigella's Chocolate Guinness Cake (from FEAST) uses the melting method, where the butter is melted togther with the Guinness, before the other ingredietns are added. The pan should be taken off the heat as soon as the butter has melted as if it boils then it is very likely that the mixture will bubble up and out of the pan. So always keep an eye on the pan.

If the mixture has only just boiled then it will be fine, just let it cool a little before adding the other ingredients. If the mixture is too hot then it could scramble the cream and egg mixture. If the pan has boiled over and you have lost a lot of liquid then it may be better to start again, if possible, as otherwise the cake will not have enough fat and liquid and may be too dry.
