Meringue Nests

Full question

Nigella mentions meringue nests in the White Tiramisu recipe. I buy meringue cookies at Trader Joe’s, here in the States. Will those work for the White Tiramisu? Thanks.

Our answer

Nigella's White Tiramisu (from HOW TO EAT) uses store-bought meringues for ease. In the UK these are usually sold as "meringue nests", which are meringues in the shape of mini pavlovas. However you can use any store-bought meringue cookie or home-made meringues, as long as they are fairly dry and easy to crumble up.

The recipe uses 125g of meringue nests (this is usually the weight of one package of 8 meringue nests in the UK), so you need to use approximately 6 ounces of store-bought meringue cookies. As the size of store-bought cookies varies it is difficult to give a number of cookies to use but we understand that the Trader Joe's meringues are sold in packages of approximately 7.8 ounces, so you need to use roughly ¾ of this size of package.
