Hi, I want to replace the dark chocolate in the rocky road recipe with milk chocolate. Should I reduce the golden syrup quantity or not use it at all?

Nigella's Rocky Road Crunch Bars (from NIGELLA EXPRESS) are a treat for a lunchbox or at teatime. The base of the bars is made with a mixture of dark (bittersweet) chocolate, butter and golden syrup (or corn syrup or similar). Crumbled biscuits (cookies) and mini marshmallows are then mixed in.
It is possible to use milk chocolate instead of dark chocolate but please bear in mind that as milk chocolate contains less cocoa solids (which help the bars to set), the bars will soften quickly once they are removed from the fridge. You could reduce the golden syrup slightly as milk chocolate also contains more sugar, but we would suggest using at least 2 tablespoons. If you omit the syrup completely then the bars may not be quite sweet enough. Also if you find dark chocolate to be too intense then you could instead use half milk chocolate and half dark chocolate (150g/5 ounces each of dark and milk chocolate), leaving all the other ingredients the same.
