I love the Mirin Glazed Salmon and wonderd if you have any idea for other kind of fish to use in this recipe?

Nigella's Mirin Glazed Salmon (from Nigella Express) is a wonderful glossy marinade that flavours the fish as it cooks. Nigella uses salmon in her recipe but the glaze should work with most large fish that can be cut into chunky fillets. So it should work with cod, haibut and salmon trout (char). The glaze will also work with trout and sea bass (branzino) fillets, but as these fillets are thinner just watch them carefully as they can overcook easily. Please try to use fish from sustainable sources.
The glaze is also similar to a teryaki glaze so you could even try it with chicken. Pound skinless, boneless thighs or breast until about 1cm/1/2 inch thick and dip these in the marinade. Cook the chicken as for the salmon, but you may need to allow extra cooking time and make sure that the chicken is cooked all the way through before serving it.
