Not sure what I have done wrong for the American Breakfast Pancakes. Used cup measures but they came out too wet and very flat.

Nigella's American Breakfast Pancakes (from HOW TO BE A DOMESTIC GODDESS) are thick, spongy pancakes that are wonderful served with crisp bacon and doused with maple syrup. The leavening comes from baking powder and make sure that the baking powder is in date, as if it is old then it will be less active and the pancakes will not rise as well.
We give US cup measures for Nigella's recipes on Nigella.com but one of the problems with cup measures is that they are less consistent than using weights, particularly for flour. When tests have been done on the weight of a cup of flour the range has been very wide, from 110g to 150g per cup of flour. So using cup measures can give you a different amount of flour vs measuring by weight. Because of this, you could try adding 1 cup (250ml) of the milk initially to the flour then adding the remainder a little at a time, using just enough to get a thick batter.
