Molasses Instead Of Treacle

Asked by Dubvegas. Answered on 7th January 2017

Full question

Can I use molasses instead of treacle in the Cider And 5-Spice Bundt? I read that in the UK molasses is called black treacle so I'm wondering if in Australia our molasses is the same thing?

Our answer

Nigella's Cider And 5-Spice Bundt Cake (from SIMPLY NIGELLA) is a spiced cake that is similar to a gingerbread and uses treacle to make the cake moist, as well as adding a dark colour and a rich flavour.

Molasses and treacle are similar and are both syrups that are made during the processing of cane sugar. In this cake it will be fine to use molasses as a substitute. There are varying grades of molasses and some molasses are very dark and bitter, such as blackstrap molasses. If you like this bitter edge in the cake then that is fine, but if not try to buy a lighter grade of molasses or use half blackstrap molasses and half golden syrup or dark corn syrup instead. This recipe should also work with both sulphured and unsulphured molasses.
