I have a glut of large tomatoes in my garden - a very successful Lockdown experiment! How can I adapt the Moonblush Tomatoes recipe to turn my glut into something I can store in oil to use over winter?

Nigella's Moonblush Tomatoes (from NIGELLA EXPRESS are halved cherry tomatoes that are put into a hot oven that is then switched off and left to cool. The name "moonblush" comes from leaving the tomatoes overnight in the cooling oven, as this is the easiest time to leave the tomatoes in the oven.
If you have larger tomatoes then you could try quartering the tomatoes and they should cook in the same time, as long as the tomato quarters are roughly the same size as the halved cherry tomatoes. If the tomatoes are very large then it becomes a bit more difficult as the seeds and pulp of the tomatoes tend to seep out if you cut the tomatoes into eighths. We would also note that as the Moonblush Tomatoes are only semi-dried they should be stored in the fridge for up to 5 days (covered in oil or without oil). We don't particularly recommend freezing the tomatoes as they can become a little mushy when they defrost, though they can still be used for sauces. If you have a glut of tomatoes you can also skin and deseed them, then freeze the flesh to use in sauces and stews at a later date.
