Our answer

Nigella's Moroccan Vegetable Pot (from AT MY TABLE) is a comforting and mildly spiced vegetable stew. It is a very satisfying vegetarian dish, but you could add some chicken if you wanted to.

We would suggest adding 6 chicken thighs, on the bone but skin removed, to the casserole dish (Dutch oven) before you add the carrots, parsnips and other vegetables. Make sure the chicken is covered with the saffron cooking liquid, adding a splash or two of extra water if you need to. Cook for 40-45 minutes, or until the chicken is cooked through and falling off the bone. Before serving the stew, shred the chicken and remove and discard the bones.
