No Fuss Fruit Tart Biscuit Base

Hi, once i have made the biscuit base for the No-Fuss Fruit Tart and pressed it into a tart pan, can I cover with clingfilm and keep in the fridge for later use? If so, for how long can I keep it? Thanks

Our answer

Nigella's No-Fuss Fruit Tart (from Kitchen and on the Nigella website) has a base made from butter and digestive biscuit (graham cracker) crumbs. As both of these items have a reasonable shelf life an unfilled tart base should keep for about a week, provided it is wrapped tightly in clingfilm and stored in the fridge.

Once the tart has been filled with the lemon cream cheese the base will start to soften (as moisture from the filling will slowly affect the biscuit crumbs) so the filled tart will keep for another 4 days after it has been filled. The unfilled tart base can also be frozen for up to 3 months. Wrap the base tightly in a double layer of clingfilm and a layer of foil before freezing. To thaw the base, unwrap it and loosely re-wrap it in one layer of clingfilm and then let it thaw overnight in the fridge.
