Nut Butter for Noodles

I have a house full of people with childhood-related peanut butter trauma. How successful would it be to substitute the peanut butter in Sesame Peanut Noodles with a different nut butter like almond or cashew?

Our answer

Nigella's Sesame Peanut Noodles recipe (from Nigella Express) has a dressing that includes smooth/creamy peanut butter in the dressing. There doesn't seem to be any particular reason why you should not use another nut butter, such as cashew nut, in the dressing, as long as it is smooth/creamy and not crunchy.

However we would note that regular peanut butter (as used in the recipe) contains added vegetable oil and sugar whereas many nut butters are "natural" and made just from the ground nuts. This may make them a little more solid than the peanut butter so you may need to whisk a little warm water into the dressing if it is too thick. You may also like to add a pinch of sugar, but taste the dressing first and adjust according to your own preference.
