Hi, I'd love to make Nigella's Orange And Blackberry Trifle, but I don't want my three-and a half-year old child having Cointreau. What can I substitute? Thank you, Sharon

Nigella's Orange And Blackberry Trifle (from Kitchen) is a free-form trifle assembled on a plate. Nigella drizzles the cake slices with Cointreau and then with orange or clementine juice.
For this particular trifle, as for all of Nigella's trifles, the alcohol can be omitted and for this particular trifle we would suggest just using extra orange juice as an alternative. The recipe uses 80ml/5 tablespoons of liqueur and we would use the same amount of orange juice, but when you are spooning all of the juice over the cake slices just make sure that they aren't too sodden with liquid. They should be moist but not so wet that they start to disintegrate.
Also if your orange juice is on the sharp side you may like to sweeten it with a little icing sugar (confectioner's sugar) first, particularly for children. You could also add a little vanilla extract to the whipped cream too.
