Our answer

Nigella's Almond And Orange Blossom Cake (from HOW TO EAT) is a damp and slightly dense cake made with a combination of ground almonds and flour. A cake of this size should make between 12 and 15 cupcakes and note that as the cake doesn't rise that much you should fill the cupcake cases about ⅔ to ¾ full, so that the cupcakes are not too skinny. We would also suggest using plain flour rather than making the cake in the gluten-free version, as the cake is already quite tender and will sink a little in the centre on cooling.

For this type of damp cake the oven temperature for smaller versions should remain the same, at 180°C/160°C Fan/350°F. The baking time is a bit more tricky, but we suspect for this type of batter it should be around 30 minutes. However we suggest that you start checking after 25 minutes and it could be slightly longer than 30 minutes. Also please note that as we have not tried the cake in this form, we are unable to guarantee the results.
