Can you suggest an alcohol-free alternative to the Malibu in the No-Churn Pina Colada Ice Cream. I am fine when a recipe has alcohol in it and is then cooked, but not otherwise. I suppose if not I could boil the Malibu first and then cool but your suggestions would be welcome.

Nigella's No-Churn Pina Colada Ice Cream (from KITCHEN) is a combination of whipped cream and pineapple juice. The coconut rum liqueur (Malibu) is added as the alcohol helps with the ice cream's texture, making it less icy and slightly softer and easier to scoop. It also adds a little extra coconut flavour.
You can omit the alcohol completely and add a drop or two extra of the coconut essence instead. However the ice cream will be slightly firmer in texture and may benefit from "ripening" before serving. To do this, transfer the ice cream from the freezer to the fridge about 30 minutes before serving. This should allow the ice cream to soften very slightly. Return any leftover ice cream to the freezer immediately after serving.
