Hello! Two years ago, Nigella made a lovely Port and Stilton Gravy on her Christmas TV show. I have been trying to find the recipe but it has been removed from the BBC website. Can you help, as I have made it before and it was really lovely, but I can't remember how I made it! Thank you.
Our answer
The Port and Stilton Gravy made by Nigella accompanies the Roast Rib of Beef in her book Christmas. It is one of Nigella's suggestions as an alternative to turkey on Christmas day. The recipe can be found on p156 of Christmas.
The gravy could also be used as an accompaniment for turkey (unbrined, as a brined turkey can leave juices that are too salty), you will just need to slice 2 onions into 1cm/1/2 inch thick rounds, spread these out on the base of your roasting tin (pan) and sit the turkey on top before roasting the turkey. Alternatively you could serve Nigella's Allspice Gravy (Christmas, p118) or Traditional Turkey Gravy (Feast, p8).
