Pulsing Ingredients in a Food Processor
Asked by Unknown. Answered on 13th January 2015
Full question
Hi, I don't have a food processor for pulsing ingredients. Can I create the same result of pulsing manually? I would like to make Nigella's Chilli Jam. Thanks, Julie.
Our answer
The pulsing function on a food processor helps to control the degree to which the ingredients are being chopped by the food processor blade by only giving it one or two turns each time. This can prevent ingredients that should be just chopped from becoming purees.
For Nigella's Chilli Jam (from Christmas and on the Nigella website) the red (bell) peppers and chillies should be very finely chopped. This can certainly be done by hand with a sharp knife and a little patience. However as you are handling red chillies you may like to put on a pair of CSI (vinyl disposable) gloves when chopping the chillies, just to reduce the risk of having too much capiscium (the chemical that gives chillies their heat) on your hands as this can sometimes cause irritation to skin and eyes.
