I would like to make the Lemongrass Trifle for a multi-generational dinner. What would you use instead of vodka to make the trifle suitable for young children?
Our answer
Nigella's Raspberry And Lemongrass Trifle (from NIGELLA BITES) has trifle sponges that are soaked with a syrup that has been infused with lemongrass before being topped with a crushed raspberry sauce. The small amount of vodka is added to lend a slight alcoholic kick.
As vodka is flavourless it is easiest to just omit it completely, though you may need to add a little more of the syrup to the sponges to make sure that they are moistened sufficiently. If you are worried that the extra syrup will make the base too sweet then you could spritz a squeeze of lemon or lime juice over the sponges, but as most raspberries are slightly on the sharp side they are likely to balance out any extra sweetness from the syrup.
