The Red Velvet Cupcake recipe is for 24 cupcakes. I want to make 24 but I have only one tray that makes 12. Can I make the whole batter and bake in two batches? Or should I make a half recipe in two separate lots? I worry that the bicarbonate of soda may not last for the second round if I made the whole batter for 24 cupcakes in one go but baked it in two batches (one after the other).
Our answer
Nigella's Red Velevet Cupcakes recipe (from KITCHEN) does make 24 cupcakes and it is absolutely correct that the bicarbonate of soda (baking soda) acts very quickly and could well have expired by the time you bake a second batch of the cupcakes, if the batter is made all in one go. The second batch of cakes would then not rise as well and would have a heavier texture.
We would recommend making a half quantity of the batter and baking 12 cupcakes, then making a second half quantity of batter separately for another 12 cupcakes. Fortunately most of the ingredient quantities are easy to halve and we suggest using 90ml (⅓ cup) of buttermilk in each half batch of cupcake batter.
