Red Velvet Large Cake

At the top of the Red Velvet Cupcake recipe, it says that this recipe makes enough for 2 x 25cm cakes with enough icing for the middle and to cover. Can you advise regarding cooking temperatures for a bigger cake, i.e does the temperature need to be dropped? Thanks in advance!
Our answer
Nigella's Red Velevt Cupcake recipe (from Kitchen and on the Nigella website) is enough to make 24 cupcakes or a 2 layer cake using 2 x 25cm (10-inch) sandwich/cake pans. The oven temperature should remain the same as it is already slightly low at 170c (325F) vs a usual oven temperature for cakes of 180c (350F).
The baking time for layer cakes is usually 25-30 minutes so check carefully at 25 minutes. If the cake feels firm to the touch, is shrinking away from the sides of the pan and a cake tester inserted into the centre comes out clean then the cake is ready. If not then give it another 5 minutes and check again. Bear in mind also that the depth of the cake pans will also affect the time slightly. if you have pans that are more than 7cm (1 1/2 inches) deep then the baking time could be a couple of minutes longer.
