Rice Wine Substitute

Hello! Is there a substitute for red rice wine in the Chicken Teriyaki recipe? It is not available where I live.

Our answer

Nigella's Teriyaki Chicken from KITCHEN uses sake, which is a rice wine that can be made with red rice. Sake can vary in flavour but we would use a dry version for this dish, as the teriyaki marinade includes sugar and also mirin. If you can't find it then you could substitute another dry rice wine such as the Chinese shaoxing wine, which in the UK can often be found in larger supermarkets.

If no alternative rice wines are available then a dry sherry would be the next best alternative, though the flavour will not be quite the same. We would suggest looking for a fino or amontillado sherry. White port is a dry aperitif that could also be an alternative, but should not be confused with the regular red ports as these would not be suitable for the teriyaki marinade.
