We tried the Roly Poly Pudding but just ended up with a roll of undercooked pastry on the inside. What happened?

Our answer

Nigella's Roly Poly Pudding (from NIGELLA EXPRESS) is a speedy version of a British nursery favourite. It uses store-bought shortcrust pastry instead of suet pastry and bakes it direct in the oven with a little liquid rather than steaming the pudding. You need 185g of pastry, which is just under half of a UK supermarket block, and the pastry should be rolled out to a thin sheet approximately 18 x 32cm.

It could be that the pastry was slightly too thick, which makes it more difficult to cook through to the centre. If the centre is not cooked after 30 minutes then cover the dish loosely with foil and bake for a further 10-15 minutes, checking every 5 minutes and adding a splash of extra milk, if needed.
