Could I use whisky rather than bourbon for the No-Churn Salted Caramel And Bourbon Ice Cream, or would it not be sweet enough?

Nigella's No-Churn Salted Caramel And Bourbon Ice Cream (from the Nigella website here) contains a small amout of bourbon. Bourbon itself is usually quite dry and whisky or non-Scottish whiskey can be substituted. Whiskey and bourbon are similar grain-based spirits that are aged in oak barrels, but bourbon has some specific requirements for fermenting and ageing.
Often alcohol is added to no-churn ice creams to help give the ice cream a softer texture. However the salted caramel ice creams are already quite soft so the alcochol is not absolutely essenatial and could be omitted, if preferred.
