Scone Mix

Full question
I would like to mix together the dry ingredients for Nigella's Buttermilk Scones to take to France with me and use them to make scones in my caravan. Can I do this
Our answer
Nigella's Buttermilk Scones recipe (from Kitchen) is a mixture of plain (all-purpose) flour, bicarbonate of soda (baking soda), cream of tartar, sugar, butter, vegetable shortening and buttermilk. It is possible to mix together the dry components of the ingredients - the flour, sugar and raising agents - in advance. However you do need to make sure that the mixture stays very dry as any humidity will reduce the effiectiveness of the raising agents over time and the scones will not be as light.
Keep the dry mixture in an airtight container in a cool place and we suggest keeping the mixture for no more than a month. For each 250g of dry mixture you would need to rub in 25g (2 tablespoons) butter and 15g (1 tablespoon) of vegetable shortening and mix in 150ml (2/3 cup) buttermilk. In a caravan storage space may be limited so you could use extra butter instead of the vegetable shortening and plain yogurt instead of the buttermilk.
