Nigella's Juicy Beef Skewers With Horseradish Dip (from NIGELLA EXPRESS) are cubes of beef soaked in a spicy marinade and served with a hot horseradish creme fraiche dip.

The recipe suggests that the beef should not be served "grill-hot", or direct from the grill. There are a couple of reasons for this. Firstly, the marinade on the outside of the beef cubes can be particularly hot after grilling and could burn your mouth if the beef is bitten into immediately. Secondly the skewers should be left for a few minutes after cooking as all cooked meat benefits from a short rest. It lets the fibres of the meat relax and also lets the juices redistribute through the meat, giving more juicy and tender meat when you do eat the skewers. We would suggest letting the skewers rest for 5-10 minutes before serving.
