Serving Steak Warm

I always struggle to serve the Vodka Marinated Steak at a decently warm temperature when letting it rest for the prescribed time. What's the answer to this problem?

Our answer

NIgella's Vodka Marinated Steak (from FEAST) cooks the marinated steak for around 3½ minutes on each side for fairly rare meat (you can of course cook for a longer or shorter time, according to your own taste). All meat benefits from a rest after cooking as resting allows the fibres in the meat to relax and the juices to re-distribute through the meat. Nigella suggests resting the steak for 15 minutes before cutting it.

To help to keep the steak warm, Nigella suggests wrapping it in foil to make a baggy parcel. This will help the steak to retain some heat as well as catching any juices that come from the steak during resting, so that they can be added to the sauce. It will help if you can put the wrapped steak in a warm place, away from any draughts. You can also put the wrapped steak on a warm plate and cover it with a clean tea towel, as this will provide a little extra insulation. Finally you could cut the resting time slightly, but we would suggest allowing a resting time of at least 10 minutes.
